On Saturday, 3rd May, low-waste chef and author Max La Manna will take over the coffee shop counter at The Mills Fabrica’s innovation gallery on York Way, King’s Cross.
Max is preparing a special menu designed to highlight innovative, future-thinking ingredients that are featured in the venue’s current exhibition - Taste of Tomorrow - but not yet on the market. There will also be a selection of ingredients incorporated into the menu that will be stocked in the Fabrica X concept store alongside the exhibition to give visitors the opportunity to make some of Max’s recipes at home.
Morrow is a coffee bean-free coffee made from British-grown crops, including pulses and beans, that have been fermented and roasted to achieve the flavour profile of roasted coffee beans. Max will use this for a coffee cake.
Max will be drizzling chocolate made without cocoa beans onto sweet versions of his signature waffles. This new style of chocolate is made using locally grown fava bean crops - perhaps better known as broad beans- fermented and roasted to achieve that familiar chocolatey taste.
Taste of Tomorrow: What will the world be eating in 2050? - is The Mills Fabrica’s first-ever agrifood showcase dedicated to exploring the future of the food system and next-generation ingredients.
The showcase presents the pivotal role of innovation in catalysing a shift away from traditional food production methods towards a system that safeguards our planet’s resilience and fosters a healthier, more sustainable society. Spotlighting 12 groundbreaking solutions, the presentation explores two dynamic frontiers of agrifood innovation: Innovation in Agriculture and Next- Generation Foods.
Alongside select ingredients from some of the showcase’s innovators, some of the dishes on offer will incorporate ingredients that can be bought from the concept store, including The Electric Tribe’s Organic Irish Sea moss. Also on the menu will be products sourced from Hodmedod, specialists in ingredients made from lesser-known indigenous pulses.
The takeover will take place from 10:00 to 15:30. The first release of 150 tickets sold out in less than 24 hours - a second drop is scheduled for April 17th so set a calendar reminder!
There will also be additional capacity for walk-ins on the day, on a first come first served queue system.

Guests can purchase snacks and drinks from the coffee shop whilst browsing the Fabrica x Concept Store, where they can also purchase a copy of Max’s cookbook. Max is excited to chat with all attendees, sign copies of his book, and talk us through his recipes. The Taste of Tomorrow exhibition will be open for guests to enjoy during their visit.
The takeover is part of a wider programme of events curated by The Mills Fabrica around the exhibition, which runs through to July 31st.
